Mediterranian Quinoa


This quinoa recipe is much like a Greek Salad, but mixed in with quinoa instead of lettuce. Quinoa is a complete protein, with all 8 amino acids. Its a great substitute for those looking to add protein, but less meat to their diet. This recipe is healthy and fresh tasting. It is always a crowd pleaser at my gatherings. I'm sure it will be at yours as well.






You'll need:

1 cup quinoa
2 cups water
15 pitted kalamata olives, cut into quarters
3 mini cucumbers, or 1 big one
1 tablespoon finely diced red onion, cut them into really tiny squares
Lemon juice of 1/2 lemon, fresh only...that translates into 1 1/2 tablespoons of fresh juice
Olive oil, 4 tablespoons
2/3 cup feta cheese, crumbled or cut into small 1/2 inch cubes
Tomato, half of a medium, cut into small cubes
1 teaspoon of fresh oregano or fresh basil or both. If you have neither, then 1/2 teaspoon of dried oregano will work great.
Salt and pepper to taste

Cook quinoa in water according to instructions, or follow my quinoa recipe on this site
Place quinoa in a bowl and allow to cook slightly
Add all remaining ingredients except feta and mix well
Toss in feta, mix and serve

Serves 6 as a side
