Roasted Sweet Peppers

A healthy quick side to any meal, sweetie peppers as my kids call it are a beautiful presentation without any fuss.  I often eat this with just some crusty bread for lunch.     You'll need:

2 lbs of mini peppers ( I got these at Costco for only $3.99)
4 cloves garlic, smashed with the heel of your hand
2 tablespoons or a drizzle of olive oil
salt and pepper to taste
5 basil leaves

Preheat oven to 450 degrees
Cut off tops of peppers and slice down middle, place in oven safe casserole (or aluminum tray)
Smash garlic with the bottom of a skillet or the heel of your hand and add to peppers
Add salt and pepper
Add olive oil and toss well
Roast (bake) at 450 degrees for 10 minutes
Garnish with basil or cut basil into ribbons and toss into peppers.
Serve and enjoy.  They'll be tender with a little crunch and sweet as candy!
If you happen to like your veggies soft, simply cook an additional 5 minutes.


Serves 4

Tip: Peppers are really low in calories because of their high water content.  2 lbs may sound a lot for a serving for 4, however when u cook them peppers reduce quite a bit, plus you'll love them so much you'll wish you had made more.
