Quinoa

Quinoa (pronounces  kin-wa) is an amazing seed. It is a complete protein, containing all 8 amino acids and its high in fiber.  I keep a container of cooked quinoa in my fridge at all times. It great on it's own, as a starch side, in salads and soups too. You can substitute it wherever you typically use rice or couscous.  Look out for all my quinoa recipe's.  Oh, and it's GLUTEN FREE.  This is hardly a recipe, but it's an important part of my kitchen.  You'll need:

2 cups quinoa
4 cups water

In a medium pot add quinoa and water.
Bring to a boil, then lower heat to lowest setting and cover.
Cook for 5 minutes and give it a stir
Cook until the quinoa looks like it is has almost dried out the water (another 5 minutes)
Turn off flame and allow to stand for an additional 5 minutes

Serve and enjoy.
