Grilled Chicken Bruschetta




Grilled Chicken topped with fresh tomatoes, basil, onion, garlic and extra virgin olive oil.  It has the scent of summer and is Healthy Italian at its finest.  Using in season produce like tomatoes and basil gives your recipe a sweetness and freshness you simply cannot get the rest of the year.  Seize the moment and up your cooking with in season ingredients.

I used my make ahead Perfect Every Time Grilled Chicken recipe for this one.  I love to have food already made that I can add to and make new and flavorful meals with.  Adding the fresh bruschetta on top makes this a really quick and super delicious meal. 

Ingredients:
  • 6 grilled chicken cutlets
  • 6 tablespoons extra virgin olive oil
  • 2 beefsteak tomatoes, cut into small bite size cubes
  • 2 tablespoon finely chopped red or white onion, preferably red if you have both
  • 1 teaspoon dried oregano
  • 10 basil leaves, rolled up like a cigar and cut into ribbons
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
Instructions:
In a bowl, add tomaotes, onions, extra virgin olive oil, oregano, basil, salt and pepper, mix well
Plate 1 chicken cutlet and spoon 1/6 th of the tomato mixture and some juice atop
Serve with crusty bread

  2. I love the dried and fresh oregano in this recipe - same with the basil. It just gives it extra layers of goodness.
