Italian Grilled Cheese Breakfast


 
When i've had enough of the typical breakfast foods and we've had pancakes 4 times and waffles another few times in a week, I turn my breakfast attention to grilled italian cheese sandwiches. They are a departure from the same ole same ole breakfast and we really like them.

 
I use whole wheat bread, low fat provolone and fresh tomatoes. This way they get fiber, whole grains along with a bit of calcium and a veggie all for breakfast....ok, I know, tomato is a fruit.  I grilled and we devoured the meal before I gout a shot of the grilled gooey goodness : ) oh well...

 

 
Ingredients:

 
  • 8 slices of whole wheat bread
  • 8 slices of low fat provolone, I used Sargento's because it melts nicely
  • 1 ripe on the vine tomato, washed and sliced thin
  • 1 stick of butter, you will only use a tiny amount though

 Instructions:
 
In a grill pan or a regular pan if you don't have one, rub the stick of butter just in the spot where you're going to place the bread. Assemble your sandwich with bread, cheese and tomato. Rub the butter on the bread lightly on either side then place in pan. Press it down firmly for a few seconds. Turn once after bread has toasted.

 
Servings: 4

 
Notes:

Rubbing the whole pan with butter will create burnt butter sections. I rub the butter just where I am going to put the bread so the butter doesn't sit in the pan burning while the bread is toasting.

  1. A great and Tasty substitute for butter is coconut oil- it gives everything a wonderful flavor and is a lot more healthy than butter. I have even made quesadillas with it :)
