Perfect Every Time Italian Dressing


Here's a dressing I make at the beginning of the week and use for all sorts of things. It's the perfect balance of acidity to oil and it's simple healthy ingredients make it a hit. I put it on chicken, over sliced steak, in salads and just about every where I can. Try it and you'll see.



You'll need:

1/4 cup lemon juice, fresh squeeze only
3/4 cup extra virgin olive oil
1 garlic clove, peeled and smashed with the heel of your hand
1 1/4 teaspoon of salt
1/2 teaspoon fresh ground pepper

Add all the ingredients together in a sealable bottle or cup, I use my childrens disposable sippy cups.
Shake vigorously for 30 seconds.  The dressing will become creamy looking and opaque. 
Remove the garlic clove.
Serve in salads, on grilled chicken, use as a marinade or put some behind each ear.  It all works beautifully!

  1. I just had this over a piece of left over grilled chicken and it was goood!

I make a similar dressing- exact same proportions but use Balsamic vingear (red wine vinegar or white wine veingar also work well) instead of lemon juice and add a tablespoon full of dijon mustard. Yummy! (If you are adventurous you could also add some chopped fresh herbs or dried herbs de provence)
