You'll need:
1/4 cup lemon juice, fresh squeeze only
3/4 cup extra virgin olive oil
1 garlic clove, peeled and smashed with the heel of your hand
1 1/4 teaspoon of salt
1/2 teaspoon fresh ground pepper
Add all the ingredients together in a sealable bottle or cup, I use my childrens disposable sippy cups.
Shake vigorously for 30 seconds. The dressing will become creamy looking and opaque.
Remove the garlic clove.
Serve in salads, on grilled chicken, use as a marinade or put some behind each ear. It all works beautifully!
I just had this over a piece of left over grilled chicken and it was goood!
ReplyDeleteI make a similar dressing- exact same proportions but use Balsamic vingear (red wine vinegar or white wine veingar also work well) instead of lemon juice and add a tablespoon full of dijon mustard. Yummy! (If you are adventurous you could also add some chopped fresh herbs or dried herbs de provence)
