Zucchini Frittata



Zucchini Frittata is a go to meal for me because it's really quick, healthy and tasty. I remember my mom making this when she was in a hurry to get dinner on the table. I myself make this just to leave in the fridge for the kids to snack on when they come home from school. A frittata and a loaf of bread and you have a meal. Quick and simple!




You'll need:

8 eggs, beaten
2 zucchini, cut into thin rounds, skin on
1/2 cup grated cheese, I like Pecorino Romano cheese
1/4 cup parsley, chopped
1 clove garlic, minced
1 small onion, chopped
Salt and pepper to taste
4 tablespoons olive oil

In a large bowl, mix eggs, cheese, parsley, garlic, salt and pepper together, beat with a fork
In a large skillet, on medium heat, add oil and onions, cook for 5 minutes.
Add zucchini to skillet, cook an additional 3 minutes
Pour egg mixture over zucchini and onions, cook covered till sides are firm, about 5 minutes
Slide from pan onto a dinner plate
Turn over frittata into skillet, cook other side for 3 more minutes covered
Cut into 6 pie cut slices

Serves 6

  2. Awww, granny! Let me know how it turns out. I have a really special key into the past. My mother, God bless her, has so many recipes from her native Italy that are sooo good and really authentic. Not the typical stuff you see in Olive Garden.
