Carrot and Chick Pea Salad

Fast and fresh, this carrot salad will pleasantly surprise you. The sweet carrots pair really well with this lemony dressing. Something about how the strips of carrot lay flat on your tongue make this salad fun to eat...and fun is essential to food!

You'll need:

6 Carrots, peeled clean, then peeled to the core
Chick peas, 16 oz can, drained and rinsed well
3/4 teaspoon salt
1/2 teaspoon oregano
Pepper to taste
3 tablespoons extra virgin olive oil
3 tablespoons fresh squeezed lemon juice

Mix peeled carrots and all remaining ingredients together and serve!

  2. hi Dani, yes, im seeing that too. i just bought a .com name and the site seems to be in transition so not everything looks/works right quite yet. please bear with me in my growing pains and try again tomorrow. by the way, loved your hospital foto. when i look at my hospital fotos it always makes me smile. pretty sad, but it the only alone time i had with my 4th thus far!
