Linguini with Clam Sauce



Linguini with Clam Sauce is a beautiful meal in under 10 minutes.  The delicious flavors of fresh garlic, parsley and clams over pasta is sure to please your family.  In the time it takes to boil pasta, you"ll have a meal perfect for Lent or anytime of the year.   




You'll need:

10 garlic cloves, minced
1/2 cup extra virgin olive oil
1/2 cup parsley, chopped
1/2 teaspoon Salt.
Pepper to taste
20 ozs can of baby clams in juice, these were 10 ozs of clams and 10 ozs of juice
1 to 1.5 pounds of spaghetti or linguini, I used spaghetti rigati, which are spaghetti with lines in them

Bring 8 quarts of salted water to a boil, cook pasta till al dente
Warm a pan, add olive oil , garlic, salt and ground pepper to taste
Cook garlic till golden then add parsley and clams and juice bring to a boil
Drain pasta and place in a large bowl, reserving  2/3 cup pasta water
Pour clam sauce in bowl along with the pasta water. Mix well.
Serve with crushed red pepper flakes if you like a bit of heat.

Serves 6-8

    I made your linguine and clam sauce recipe for dinner tonight. I did add a small pad of butter and 1/2c white wine. I also added the crushed red pepper flakes to the sauce just before serving. What a wonderful dinner we had. My husband baked bread last night. Truly a great dinner. I should have made a salad and it would have been an AA+. Thank you for the inspiration. I look forward to reading your past recipes. Wow
