Chicken Rollatini


This healthy Italian CHICKEN recipe is one I remember from my childhood. These rollatini are stuffed with sweet red onion, savory cured meat and hard Italian cheese. Its a flavor packed combo that will wake your tired of chicken taste buds!





You'll need:

1 small red onion, sliced thin
1 lb thin sliced chicken cutlets
1/4 lb sopressata or genoa salami or any thin sliced meat you have...ham works great in this.
1/4 lb cacciocavallo cheese, sliced into thin sticks or even mozzarella cheese
1 cup of breadcrumbs, seasoned like 4C brand
1/2 cup of olive oil
Juice of 1 lemon
Salt and pepper to taste
1/4 teaspoon of oregano


Wash and pat dry chicken cutlets
Preheat oven to 450 degrees
In a small plate pour in oil and squeeze in lemons, mix well with a fork
In a second plate pour breadcrumbs
Dredge cutlets one by one though oil then breadcrumbs and place on baking tray or in casserole
Place one slice of salami, one stick of cheese and a small palm full of onion (like 10 individual pieces) onto each slice of chicken.


Roll chicken, turning seam to bottom, no toothpick necessary
Bake at 450 for 35 min.
