Sneaky Turkey Meatloaf


I call this sneaky meatloaf because I hide all sorts of veggies in it. It super moist and tasty and loaded with fiber and low calorie vegetables. Look at the ingredient list. I almost can hide a wooden spoon in this without the kids noticing. You'll need:

1 package of 94 or 99 percent fat free ground turkey meat
5 medium carrots chopped finely in food processor
1 green pepper chopped finely in food processor( will be watery, that's ok)
1 medium onion chopped in food processor
1/4 cup parsley chopped finely
1/4 cup Pecorino Romano grated cheese
1 egg (to bind it) beaten
1/2 cup chick peas (from a can) drained and ground in food processor
1/2 cup tomato sauce
1/2 teaspoon of salt
1 teaspoon fresh ground pepper

Combine all the ingredients in a casserole.
Mix by hand (my favorite kitchen tool) until combined. Make sure not to handle it too much as the more you mix it the harder the meatloaf will be.
Form into a loaf shape.
Bake at 400 degrees for 50 minutes in a preheated oven.
