Pane Consato


Pane Consato is Bread with Anchovies, Hard Cheese and Extra Virgin Olive Oil.  It is a true Sicilian delicacy. I can remember in my childhood cold winter lunches with the aroma of fresh bread toasting in the oven.  That's when I knew we were having Panne Consato.  Add a tomato basil salad to this and you have a lunch much the same as one eaten in Sicily by my great grandparents in the 1800's.  This is a easy lunch for me to make because they are ingredients I always have on hand.  My pantry is stocked among other things with anchovies, hard cheeses and olive oil.  If olive oil is healthy, well then this is a very healthy meal :)


You'll need:

1 loaf of bread, I used ciabatta
5 pieces of anchovies
1/4 pound of hard cheese, I used cacchiocavallo cheese
1/2 cup extra virgin olive oil
Cracked black pepper

Warm bread in a preheated 400 degree oven for 10 minutes, then cut the bread lengthwise. Drizzle olive oil over the bread on both sides. Break anchovies and cheese into small pieces and place throughout the bread. Grind pepper onto bread to taste. Close and cut the bread into portions.

  1. My goodness! I can't believe you posted this. Wow, this brings me back to my childhood in such a big way. My dad used to make this along with a version with chopped tomatoes, garlic, olive oil and cheese. You are right, this is true Sicilian food. I love your blog!
