Salmon Salad with Honey Vinegarette

Simple Delicious Healthy and Fast...All what I look for in a dinner and this has it all

You'll need:

4 pieces of salmon fillets (approximately 6 oz)- fresh or frozen
1 package (I used a 5 oz package) Arugula
2 tablespoons Dijon mustard
2 tablespoons honey
1/2 cup extra virgin olive oil
1 teaspoon salt
1/2 teaspoon fresh ground pepper (it makes a big difference over pre ground)

Wash salmon ( leave it wet) and put in ceramic or glass bowl, cover with a plate and microwave on high for 5 minutes. It will steam beautifully.

While that's cooking, place arugula in a large bowl (I buy pre washed) set aside.

Combine all other ingredients(Dijon, honey, olive oil, salt and pepper) and shake well.

Pour dressing into salad reserving 4 teaspoons. Toss well.

Once the fish is ready, I peel off the skin and place the fish over the salad and add a reserved teaspoon of honey mustard on top of each piece of fish. It is a easy meal with lots of flavor and protein, not to mention ready in less than 10 minutes.

  1. My mom gave me an extra piece of salmon, so I decided to make this or my lunch tomorrow. Good thing you told me the fish will make a ton of noise, lol!
